Easy peasy lunch

I thought it is time enough that I share a new recipie I found on Karen Cheng's blog. I was thinking if there is a easy way to prepare lunch for work the next day and voila! Karen blogged about her problem-free dinner and I thought I would dissect the recipie and make it my own.

Ingredients:
Can of tuna
Can of 4 bean mix
Can of diced tomato
Rice
Mixed Veg (Ang Moh style)
There is a handful of baby spinach that went into the dish in the end, but I forgot to take a pic.



I cook the rice. Helpful hint: How much water to put into the rice cooker when cooking rice? My mum taught me, that the water should come up to about 1 inch above the level of rice.



I sauteed the beans and the mix vegetables together. It looks so colourful in the pan. It's like I am going to eat a rainbow or something. I added a dash of oyster sauce to the mix to make it more tasty.



When the rice is done, dump the rice, beans & veg, tuna, diced tomato, baby spinach and season with salt in a big bowl. Mix altogether. That's it! Easy peasy! And my lunch tomorrow sure looks very tasty.
